Ingredients :-

3 Tsp ghee
1 Tsp oil
Cooked rice
Saffron water
Chopped green coriander 

To marinate the vegetables :-

3 Tsp curd
1/2 tsp turmeric powder
Salt to taste 
1/2 tsp red chilly powder
1 Tsp coriander powder
1/4th tsp garam masala
1 cup paneer cubes
1 cup chopped potato cubes
Chopped thinly sliced onion
Roughly chopped tomatoes
Chopped green chilly
Grated ginger
Some cauliflower florets 

Method :- 

In a mixing bowl add curd,salt,turmeric,red chilly powder,garam masala,coriander powder,mix well and add all the vegetables to marinate.
Let it marinate for 30 minute.
 Heat a pan with ghee and oil
Add all the marinated vegetables and cook for 10 to 15 minute untill all the vegetables cooked completely.
Now removed half of the cooked vegetable and keep it aside.
Now layer the cooked rice over cooked vegetables then layer it with vegetable which we removed earlier.
Again layer it with cooked rice and sprinkle some saffron water.
Garnish it with chopped green coriander.
Cover it with lid and Dum cook for 10 to 12 min.
Now serve this biryani with boondi or onion raayta.

Ingredients :-
2 cup semolina (suji)
1 cup curd (dahi)
1 chopped capsicum
1 chopped tomato
1 chopped onion
1/4th tsp of red chilly powder
Pinch of turmeric
Pinch of asafoetida (hing)
Salt to taste 
4 Tsp gram flour 
Water as requires to make batter
Oil 



Method -
In a mixing bowl add 2 cup of semolina and 1 cup curd mix well and add required water 
Now add capsicum,tomato,onion,salt,red chilly powder,turmeric,hing,gram flour and salt to taste. 
Now make the batter ,stir well to avoid lumps.
Rest the batter for 15 minute.
Heat the pan,grease with oil or ghee.
Pour 2 to 3 spoon of batter over the pan and spread the batter in circular motion.
Cover the pan with lid and cook the cheela for 2 to 3 minute.
Now flip the cheela and roast on other side till cheela becomes crispy and golden brown.
Now serve this cheela with green chutney and sauce.

 Ingredients :-

For filling :- 

  • white bread or brown bread
  • cheese slice
  • 3 to 4 boiled potato
  • 1 chopped capsicum
  • 1 chopped onion 
  • 1 chopped tomato
  • salt to taste 
  • red chilly powder or you can add black pepper 
  • you can add more veggies 

Method :-

  • In a mixing bowl mashed the boiled potato,add chopped capsicum.onion,tomato,salt and red chilly powder.
  • Now spread this filling on bread and place the amul cheese slice and cover with one more bread.
  • grease the pan with butter now toast the sandwich on low flame and cover it for 1 to 2 min so that cheese melts completely then flip and toast the other side for 2 min.
  • Vegetable cheese sandwich is ready to serve.

There are so many types of pakora made across the india in which everyone's favorite is onion pakora.onion pakora is like king of pakoda but here i am sharing the very tasty,crispy,crunchy moong dal pakoda or mangodi recipe which taste delicious and you can have this pakoda with simple chutney or chai.



Ingredients:-

2 cup skinned split green grams 
2 chopped onion
2 chopped green chilly
Salt to taste
Oil for deep frying
Green coriander

Method:-
Soaked green split green gram (mung dal) for overnight or more than 4 hrs.
Now wash the dal and blend it roughly,do not add water while blending.
Add chopped onion,chopped green chilly,salt to taste and green coriander into the mung dal paste.
heat the oil for deep frying in a kadhai or pan,drop spoonful of mung dal batter in medium hot oil and fry untill it color changes to golden and crisp.
Now serve this mung dal pakoda or fritter with chutney,sauce,chai or anything you like this pakoda.

How to make crispy  samosa:-

Ingredients:-

For samosa dough-
2 cup all purpose flour (maida)
1/2 tsp carom seeds (ajwain)
Salt to taste
1/4th cup oil
Mix all given ingredients and knead the dough with luke warm water.
Knead hard dough and keep it aside for 15 to 20 min.

For samosa stuffing- 
6 Boiled potato
2 chopped Green chilly
Salt to taste
Chopped green coriander

Mashed the boiled potato and mix all the  given ingredients.
You can add garam masala,green peas,paneer cubes,cashew raisin etc.

Now roll thw ball size dough,slightly thick and then cut into half, now seal the egdes and fill the stuffing into cone and sealed it again.

Now heat the oil for deep frying,fry the samose on medium hot oil until it color changes to golden and crisp.
Now this samosa with green chutney or sauce.

Suji dhokla / Rava dhokla / Tasty dhokla for kids



Ingredients :-
1 cup semolina (suji)
1 cup curd
Salt to taste
1/2 tsp powdered sugar
Water as required
Eno or fruit salt

For tempering -
1 tsp oil
1/2 tsp mustard seed

Method -
Take 1 cup semolina or suji in a mixing bowl,add 1 cup curd mix well and add water to make lump free smooth batter.
Keep it aside for 10min
Now add salt to taste ,1/2tsp powdered sugar,1 tsp eno or fruit salt.
Mix slowly for 10 sec
Now transfer the batter into greased tin and steam it for 20 min.
After 20min check the suji dhokla by inserting knife into it,if it comes out clean then dhokla is perfected cooked.
Now temper it with oil and mustard seed.
You can add green chilly if you want but if you are making it for kids then skip chilly.
Now serve this dhokla with sauce.

Prepration time - 10 min 
Baking time - 15 to 18 min

Ingredients :-
1 cup all purpose flour (maida)
1/2 cup powdered sugar
3 tsp butter/margarine/clarified butter
Pinch of vanilla essence powder

Method :-
In a mixing bowl take 1 cup of all purpose flour,add 1/2 cup powdered sugar,3 tsp margarine and pinch of vanilla essence powder.
Mix well to make smooth and creamy dough.
Use beater for smooth dough.
Now make a log of this dough with soft hand and cut it into desired shape cookies.
Now bake it into preheated oven at 180'c for 15 to 18 minutes.
Crunchy cookies are ready to serve.

Ingredients :- 

1/2 cup curd
1 cup powdered sugar
1 /2 cup oil
1 & 1/2 cup semolina (suji)
1/2 cup all purpose flour (maida)
1/2 cup milk
1 tsp vanilla essence
2 tsp tuti frutti
1 tsp baking powder
1/4th tsp baking soda

For baking in pressure cooker :-
1 cup salt
1 iron stand
Baking dish

Method:-

  • In a mixing bowl, take 1/2 cup curd and 1 cup powdered sugar now mix it well untill the mixture becomes creamy.
  • Then add 1/2 cup oil (any vegetable oil)
  • Again whisk it well then add 1 & 1/2 cup semolina and 1/2 cup all purpose flour.
  • Mix well to maintain the batter consisitency add 1/2 cup milk. Milk should be at room temperature. 
  • Add tuti frutti to add flavor and every kids likes to eats tuti frutti cake.
  • Now add 1 tsp vanilla essence, mix well.
  • Add 1 tsp baking powder and 1/4th tsp baking soda. 
  • Mix well,do not overmix.
  • Now grease the silicon cupcakes with oil or butter.
  • Fill the batter 3/4th of the moulds.
  • Bake this cupcake into preheated oven at 180'c for 10 to 12 min.
  • Now demould the cupcakes after it cools down to room temperature.
  • Rava cupcakes are ready to serve.

1/4th tsp baking soda

How to make Kaju Katli Recipe step by step,cashewnut fudge,kaju burfi.






Ingredients:
2 cup cashewnut 
200 gm sugar 
2 tsp clarified butter (Ghee)
1/2 tsp Cardamom powder 

Method :-
Take 2 cup of cashewnut in mixer jar and grind it, now strain this cashewnut powder through seive so that big chunks are separated. Now this big chunks grind it later.
Add 1/2 cup of water and 1 cup of sugar into the pan and let it dissolve 
Now add cashew powder and cardamom powder into it and keep the flame low and stir continously untill it gets dense consistency.

  • Now add 2 tsp of ghee ,mix throughly and continue cooking untill it gets thick consistency.
  • Now turn off the flame and transfer the cashew dough in a greased plate let it cool for 2 min. Do not cool it completely.
  • Now grease hand with ghee and roll the paste.
  • Place rolled ball into the grease aluminium paper or butter paper and flattened it with rolling pin. 
  • Now place this sheet inside the refrigerator to set and then cut into diamond shape.
  • Let it dry a bit then separate it with knife.
  • Tempting kaju katli is ready to serve.
  • It can be prepred for any festival,party,puja bhog or anytime we crave for something sweet.
  • You can store it in refrigerator for a month.

How to check purity of jaggery (Gur)





Jaggery is a sweetner that is made from sugarcane and it is obtained by boiling raw and concentrated sugarcane juice.
It is known to be healthier alternative to white sugar because of its superior nutritional profile.
U will find shops,vendors and even thella wallahs selling this traditional indian favorite.
But how can be sure that what are you buying is pure or not?
We tell you how to identify good quality jaggery and the parameters to check its purity.

1. Do taste a piece of jaggery it should not taste even slightly salty.
If it does,this may indicate a high concentration of mineral salts.
2. Check for any crystal on the jaggery,presense of crystal may indicate that it has gone through some process to make it more sweeter.
3. Color of jaggery also play important role.
Color of jaggery should be dark.
Yellowish color of gur indicate chemical treatment.
Chemicals like - Nirma washing powder,Hydro chloric acid.

Bajra Til ki Tikki Recipe 

Bajra tikki recipe mostly made in winter season,all the ingredients used in this recipe gives energy and contain many health benefits.




Ingredients : - 

200gm bajre ke aata ( pearl millet flour )
1 cup jaggery (gur)
1 glass water
2 to 3 tsp of sesame seeds (til)
2 tsp oil + oil for deep frying

Method :- 
Heat a pan add 1 glass of water and 1 cup jaggery (gur) boil till jaggery completely melts. 
Use this water to knead the bajra dough.
Take 200 gm bajra aata ( pearl millet), add 2 to 3 tsp of Til (sesame seeds) , 2 tsp of oil and now knead the soft dough with jaggery water.
Now make the balls and flattened it with hands, do not use rolling pin.
Deep fry all the tikki till the color changes to golden brown.
Enjoy this bajra til tikki in winters.

Weight gaining food for babies 

Weight gaining food are those which helps to increase the weight of baby. There are some foods that can really helps to increase the weight but these are applicable only if your baby age is 6 month plus that means on solid diet.

    1. Breast milk or formula milk

    Breast milk or formula milk  is a great source of nutrition it has fats and all the nutrients that is essential for baby growth and weight.

    2. Curd (dahi)
    Curd is also a good option specially when you make it at home and made up of full cream or full fat milk. You can make smoothie with curd  can be served with khichdi etc.

    3. Clarified butter or ghee -
    Homemade ghee (clarified butter)
    2 to 3 tsp of ghee in a day helps to gain the weight.
    Ghee can be included in dal,daliya,khichdi,paratha,poori etc
    Homemade ghee is best for babies.

    4. Sweet potato -
    Every child likes to eat sweet potato. You can add sweet potato in vegetable soup, dal, mashed form , can be added in smoothie.

    5. Banana - Mashed banana is the first food when we introduce the solid feeds and every child likes to eat banana. Banana is like a full meal and good source of calcium.

    6. Ragi (finger millet) -  Ragi can be given as porridge or chilla.
    Ragi should be given in breakfast.

    7. Avacado - Avacado helps in brain development,baby growth.
    It is very nutritious for weight gaining process. Avacado smoothie can be given with milk or curd.

    8. Pulses (daal) - Pulses are good source of protein, you can start with moong dal then gradually as the age increases all the pulses (toor dal,urad dal, masoor dal) are beneficial for baby weight gain.add asafoetida (hing) in dal thats helps in digestion.

    9. Potato - we all knows potato helps to gain the weight. Potato can be given in so many forms like mashed potato , finger chips ,potato patties , aaloo paratha , aaloo poori etc.

    10. Almonds - Almonds is not only good for brain development but also for weight gain.
    Almond can be given as - 
    Soaked almonds in the morning breakfast with milk.
    Almond powder with lukrwarm milk.
    Almond in kheer and semolina halwa.

    Chyawanprash for babies ?







    What is chyawanprash - 

    Chyawanprash is a dietary supplement. It is a mixture of gooseberry,ghee,honey,spices and some herbs.

    Take 250 gm of gooseberry (Amla) wash it properly then put it into pressure cooker for 3 to 4 whistle.Now take out the gooseberry from pressure cooker and let it cool for 5 minute.Now remove the seeds from gooseberry (Amla) and make a paste of gooseberry.Turn on the flame and put the kadhai on it.Pour the Amla paste in the kadhai and add equal amount of sugar (250gm).Mix it well and cook the mixture untill it becomes thick.Now check the consistency of jam if it is not flowing from spatula then it is done.Now enjoy this homemade gooseberry jam with bread or Parathan.Store it in air tight container for 2 to 3 months.

    Ingredients :-

    1 cup all purpose flour 
    3 to 4 tsp powdered sugar 
    1/2/cup clarified butter or oil  (ghee)
    1/2 tsp baking powder 
    1/2 tsp salt 
    Pinch of baking soda
    1 tsp roasted cumin (Jeera)
    Dessicated coconut powder 

    Method :-

    In a mixing bowl add 1/2 cup of clarified butter or oil or butter and 2 to 3 tsp powdered sugar. 
    whisk it well till mixture become fluffy and creamy. 
    Then add 1 cup of all purpose flour , 1/ tsp baking powder. 
    1/2 tsp salt , 1 tsp roasted cumin (jeera) , pinch of baking sod.a 
    Mix and crumble. 
    Now add 2 to 3 tsp of milk (milk should be at room temperature. 
    Make soft dough. 
    Now make round balls of cookies with the soft hand and flattened it with fork.
    Now coat all the cookies wit dessicated coconut powder. 
    Bake cookies in preheated oven at 150 degree celcius for 20 to 25 minutes or untill lightly toasted.
    Cookies are ready to enjoy.
    Serve this cookies with tea or coffee.

    INGREDIENTS :-

    1 packet Parle g biscuit 
    1 packet hide and seek biscuit 
    4 tsp powdered sugar 
    2 tsp milk powder 
    1 tsp cocoa powder
    Milk to make batter
    1/2 tsp baking powder 
    1/2 tsp baking soda 
    1 packet Amul fresh cream / readymade whipped cream
    cherry ,chocolate wafers , grated chocolate powder and gems for garnishing.

    METHOD :-

    In a mixing bowl add 1 packet Parle g biscuit powder,1 packet hide and seek biscuit powder,4 tsp powdered sugar,1 tsp cocoa powder, 2 tsp milk powder and add milk to make batter.
    After that add 2 tsp vegetable oil, mix well and 1/2 tsp baking powder and 1/2 tsp baking soda mix well to make smooth batter.
    Grease the cake tin with oil .
    Preheat the cooker for 10 min and add salt at the base of cooker,place iron stand or ring into it.
    Now transfer the cake tin into preheated cooker carefully and cover the lid , remove whistle  and rubber of the cooker. 
    Leave it for 20 to 25 min.
    After 25 min open the  lid and check the cake with toothpick,
    if it comes out clean that means cake is perfectly baked,if it does nt comes out clean and then  bake for atleast 10 min.
    Now use knife at the side of cake and transfer the cake into plate.
    Now before icing cut the cake into 2 layer and apply cream on the first layer then place the second layer on the first layer.
    Now again apply the cream on second layer.
    Now sprinkle grated chocolate powder on second layer of the cream.
    Make flower on the top with the help of piping bag having star nossle.
    Add cherry on top of the flower 
    Use chocolate wafers and gems for garnishing at the side of the cake.

    1 Glass of pomegranate juice
    2 Tsp corn flour
    2 Tsp powdered sugar
    Anar chilka
    1 Tsp butter
    1/2 tsp dalchini powder
    Some chopped dry fruits

    Method :-

    In a pan add one glass of pomegranate juice and 2tsp corn flour, mix well
    In another pan take anar chilka and one glass of water boil till water changes the color now strain this water into pomegranate corn flour mixture.
    Now start cooking this mixture in medium flame.
    Add  2tsp powdered sugar, 1/2 tsp dalchini powder and 1 tsp butter to give the glossy and creamy flavor of thia jelly mixture.
    Cook the jelly mixture till it change into batter consistency.
    Now turn off the gas and leave the jelly mixture to cool down it temperature for half an hour
    Pour this mixture into greased silicon moulds and glass cups or bowl
    and transfer into refrigerator for 2 hrs to set the jelly.
    After 2 hrs demould the jelly and enjoy this homemade pomegranate jelly without gelatin.

    Ingredients:-

    For Batter or Paste:

    1 Cup Gram Flour (Besan)
    1 Cup Curd (Yogurt – thick and non-sweet)
    1/4 Cup Water
    2 Tsp Powdered Sugar
    1 Pinch Turmeric Powder & Red Chilly Powder
    1/2 Tsp Salt
    1 Tsp Green Chili (Finely chopped into small circular pieces)
    1 Tsp Fruit Salt (ENO as known in India – you need unflavored one)
    1 Tsp Ginger paste (Or grind regular 1 Inch Ginger into fine paste)

    For Seasoning:

    1 Tsp Mustard Seeds
    2 Tsp Coriander Leaves (Chopped into small pieces)
    1 Tsp Sugar
    2 Green Chili (Slice each into 2 pieces by center)
    7 to 8 Curry Leaves
    1/4th  Cup Water
    2 Tbsp Oil

    Method -  

    Take a bowl add 1 cup gram flour,2 tsp semolina,1 cup thick curd, 1 chopped green chilly, half inch grated ginger,salt to taste,pinch of red chilly powder and turmeric.
    Mix everything well to make smooth batter add little water to maintain batter consistency.
    Before baking grease the baking dish with oil or butter.
    Now add 1 tsp eno or baking soda into the batter,mix well do not overmix.
    Now transfer the batter into baking dish and microwave it for 4 to 5 minute at high temperature.
    You can see dhokla is perfectly baked in this picture.
    For tempering - in a pan add 2 tsp mustard oil, now wait for oil to heat up then add 1 tsp mustard seeds,7 to 8 curry leaves , 2 splits green chilly, chopped green coriander, 1 tsp sugar and 1/4 th cup of water.
    When water starts boiling pour this tempering over the dhokla.
    Now cut the dhokla into desired shape or square shape.
    Serve this dhokla with chutney aur sauce.
